    The old Almazara del Conde is a vestige of the importance of the stately heritage in the municipality of Sot de Chera, being the oldest olive oil industry that is preserved. It went from being a family-type oil mill to becoming the

    The main economic activities of the inhabitants of our municipality have been fundamentally those linked to agricultural and mountain exploitation.

    While crops such as wheat and corn gradually disappeared from the lands of Sot de Chera, the olive tree has always been part of the culture of its inhabitants. The  variety of crops that were traditionally cultivated were Sollana and Villalonga, and over the years the following were introduced : Picual, Blanquilla, Serraneta, among others .

    The property was structured into small  farms, in the form of minifundia, almost indivisible.

    Olive trees are dry-farmed, therefore the production, yield and quality of the oil obtained from the  transformation process depends on the quantity and regularity of rainfall. Excessive autumn rainfall increases oil production.

    The fruit of the olive tree in Sot de Chera has always been consumed either as oil, once it has gone through the transformation process, or as table olives, seasoned with aromatic herbs from the land depending on whether they are green or black olives.
